What to expect

You'll arrive at the House of Representatives and be led through a short orientation before settling into the prep area. Your guide demonstrates knife grip, fish-cutting angles, and the gentle pressure needed to shape rice and fish into finished pieces. You'll move at your own pace—expect some initial awkwardness with the knife, but instructors work patiently with fumbling hands. By the final pieces, muscle memory kicks in.
