Between kitchen tasks, settle in with local wine, mortadella and regional ham. Finish by eating what you've made, and take home a cookbook of recipes plus Italian classics to recreate your own kitchen.

What to expect

You'll start by mixing and rolling fresh pasta dough coloured with spinach, learning the rhythm of the work by hand. The chef walks you through building béchamel from butter and flour, then you layer it with the house ragù (already simmered for hours) and your pasta sheets into a dish ready for the oven. While that cooks, you'll turn to gelato—tempering, churning, and tasting your way to the finished product. Between steps, you'll have time to drink wine, eat mortadella and ham. The whole group reconvenes to sit down and eat the lasagna fresh from the oven, followed by your homemade gelato.
