What to expect

You'll arrive at a modest kitchen in Palermo's historic centre and work alongside your host to prepare pasta from basic ingredients. Expect to spend the first portion mixing dough, kneading and resting it, then moving into shaping—rolling sheets by hand or cutting tubes and tubes, depending on the day's menu. Mid-way through, you'll start cooking components of your meal while continuing to finish pasta work. The pace is realistic rather than rushed; there's chatting, tasting, adjusting seasonings. Good to know
